Really easy strawberry microgreens salad

Some kids want nothing to do with big, leafy salads that are tough to chew through. If that sounds familiar, then what I am sharing below will be the favorite salad ever for your kids. This recipe is sweet, bright, with our tasty strawberries, and it is built on a base of our tiny mighty greens that are effortless to eat - no wrestling with giant kale leaves required!

Strawberries add a fresh sweetness, and a handful of crunchy candied walnuts takes the whole bowl to another level. If you like, a simple strawberry-balsamic blend that comes together in seconds is the perfect dressing for this salad. Just blend and pour, that’s it!

First, make the dressing:

Add the 6 whole strawberries, balsamic vinegar, raw honey, olive oil, salt, and black pepper to a blender. Blend until smooth and glossy. Taste and adjust the sweetness if needed.

Second, assemble the salad:

Wash and place the microgreens in a large bowl, and add the sliced strawberries. Drizzle the fresh dressing over the top and gently toss to coat.

Finish with a little crunch:

Sprinkle the candied walnuts over the salad just before serving. Enjoy immediately while everything is fresh and crisp!
